| February 2010 French Country Stew Ingredients 1lb Kielbasa 1 medium sized onion 1 large celery stalk 2 16oz cans navy beans 1 16 oz can sliced carrots, drained 1 14 1/2 oz can stewed tomatoes 1/2 tsp dried thyme leaves 3 chicken breasts (cooked and chopped into bite size pieces) Cut Kielbasa diagonally into 1/2 inch slices. Chop onion. Cut celery stalk diagonally into 1/4 inch slices In 5-quart Dutch oven over medium heat, cook kielbasa until browned. With slotted spoon, remove ielbasa to bowl. In drippings in Dutch oven, cook onion and celery until tender-crisp, stirring frequently (add olive oil if necessary). Add beans with their liquid, carrots, tomatoes, thyme leaves, chicken, kielbasa and any other veggies you choose (look at the stock at add/remove liquid based on your preference). Heat to boiling, Reduce heat to low; cover and simmer for 5 minutes. Serves 6.. |
